All Natural Sweetness
Spring time on the farm is oh so sweet. Not only do we get to welcome a new batch of baby animals, we get to spend time in the woods collecting mother nature’s sweet nectar.
We are fortunate that our small patch of woods is filled with maple trees. As the air temperature rises above freezing during the day and drops below freezing at night, the sap begins to flow. We tap a few trees, extract the sap and fill our buckets.
It takes about 40 gallons of sap to generate about 1 gallon of syrup. After sap collection is complete, we boil it to steam off the water and concentrate it into a golden and sweet syrup.
All natural sweetness. I am not sure what is sweeter, the syrup or the time spent in the woods with our family and nature.
